Cercle V Calendar x Hind Al Mulla
Home Bakery is an Emirati company born out of love and a passion for pastry-making. In August, we introduce its co-founder and creative director, Hind Al Mulla. Guided by a certainty that “people eat first with their eyes”, Cercle V hallenge winner Hind reveals a creation designed after her Emirati, Middle Eastern and Arab origins.
“I wanted to represent my origins, my roots and who I am in a unique and subtle way through this creation.”
Her creation is a shortcrust tart and a dacquoise assembly topped with a Dulcey 35% and vanilla caramelized mousse. At its heart lies an almond sponge with a dash of cinnamon and tonka, and an almond and date praliné. A disk of Opalys 33% white chocolate and a vanilla mousse with almond and date praliné round off this dessert.
Inspired by Valrhona’s history since its very earliest days, Hind shares the company’s own passion for chocolate and excellence. Hind was won over by Valrhona’s range and its ability to constantly renew itself and offer different notes and aromas, and she’s is inspired daily by this collaboration to create creative pastries that break free from boundaries.
