Chef Walter Musco is our Cercle V Challenge winner for September. Having owned and run the Pasticceria Walter Musco - Bompiani kitchen laboratory in Rome for many years, Walter’s vision for pastry-making is profoundly influenced by his passion for art and quality ingredients.
“Pasty-making must be shared and allowed to grow with the awareness that diversity and cross-fertilization between professionals are what make our work so beautiful.”
“Dona Flor” is a cake inspired by the character of the same name created by writer Jorge Amado, whom the chef particularly loves. This dessert uses Walter’s favorite South American flavors, namely chocolate - specifically Macaè 62% - and pecan nuts.
But why Valrhona?
Because it represents the desire for freedom and the importance of life’s little pleasures. It’s a metaphor that mirrors our longing to live a happy life.”
